In the New England wedding industry, it’s no secret that summer is our busy season. We are creating memories every weekend from May to October and are constantly on the go. Winter is when we take time to relax, refresh, and regroup! (I think it’s safe to say we have things we love and hate about both summer and winter)

Here at A Thyme To Cook we’ve been spending our winter revising our menu ideas, exploring new wedding trends, and chatting with our future brides about their hopes and dreams for their big days this year!

Now that spring is in the air  (Can you believe it’s March? I still can’t believe it myself!) we get to experience that wonderful feeling of waking up to 55 degree weather, walking outside to see the little green bulbs peeping out of the ground, and hearing the birds sing good morning.

This Sunday was no exception as everyone who made it to the Wadsworth Wedding Show got to experience a beautiful sunny drive to the Middletown mansion.

With New Years Eve rapidly approaching, we were looking for a fun beverage that was both tasty and unique to wow your guests.

We went directly to Patti – one of our amazing Event Managers and longtime bartender – for one of her go-to drinks for New Years.

Here is Patti’s New Year Champagne Margarita. Enjoy!

Ingredients

Makes 2 Margaritas:
• 4 T. Rose’s Sweetened Lime Juice
• 2 oz. white tequila
• 2 oz. Triple Sec
• 1 T. fresh squeezed lime juice
• 6 oz. brut champagne/sparkling wine

For Sugared Rims & Garnish:
• About 1 T. turbinado sugar (sugar in the raw)
• About 1 T. granulated sugar
• Lime wedges

Chef Angela’s Holiday Chocolate and Peppermint No-Bake Cheesecake Balls

Looking for an easy treat that will amaze your holiday guests and allow you to get out of the kitchen and actually enjoy your company? We have you covered! We asked Angela, our award-winning Pastry Chef, for a quick idea on a crowd-pleaser.

You can prepare this sweet snack well in advance and keep in your refrigerator until you’re ready to serve. Perfect for a late night sweet, the final round of a great cocktail party, or to have on hand for unexpected company who stop by to carol at your door.

Makes 20 portions (balls)

INGREDIENT LIST

8oz Cream Cheese (softened)
5 Tablespoons Butter
½ Cup Crushed Graham Cracker
4 Cups Powdered Sugar
½ Teaspoon Vanilla
½ Teaspoon Peppermint Schnapps
1 ½ Cups Melting Chocolate
Crushed Pinwheel Candies or Candy Canes

Mix cream cheese, butter, graham crackers, powdered sugar, vanilla and schnapps in a mixer to a smooth creamy texture.
